Chef Art Rogers wanted to recreate the restaurant experience of Primo in Rockland ME that was seasonal, local creative cuisine. He reached out to local farmers and developed relationships finding out what animals they raised and what produce they grew. From these talks Lento was developed and changes as new farmers create relationships. Lento prides itself on butchery, creativity, and from scratch dishes.

Locally sourced meat, dairy, and produce with fresh seasonal ingredients lead to a unique dining experience. Featuring a raw bar with oysters, clams, shrimp, and lobster. Craft cocktails use locally sourced ingredients and lend the perfect compliment to the dining experience. In house butchery, smoking, curing, made-from-scratch bread, and pasta.
